Amazing energy balls

Here is a recipe for a great snack that travels well.  I serve these on all my yogasurf retreats and as long as they don’t get soaked in rain water, people love them.  They actually taste even better when you accidentally spill cold brew coffee on them.

Energy Balls

You will need:

1/3 c sesame seeds

1/3 c honey

½ c plus 2 tbsp raw sunflower seeds or walnuts etc.

1 tbsp tahini (sesame butter)

1 tbsp of almond butter

1/8 salt

½ c unsweetened shredded coconut, plus an additional ¼ c for garnish

1 tsp vanilla extract (optional)

¼ tsp ground cardamom

1/4 cup chocolate chips

Grind the raw sunflower seeds, flax and sesame seeds into a rough powder in a blender/food processor.  Combine all ingredients into a stiff and slightly crumbly dough.  Press into balls and roll in coconut, sesame seeds, or cocoa powder. Place in the freezer or fridge to keep fresh for up to two weeks.

    Emily, could one substitute Nutella for the almond butter do you think? Everything else I actually have on hand!

    you could try it and let us know how it turns out. peanut butter might also work.

    One more ? – the directions mention Flax, but the list of ingrediants does not. How much of what form of flaz is needed for these most amazing energy balls?
